ASTA grade. Sterilized. White pepper is the black peppercorn with its outer skin removed, giving a sharper, earthier heat and no dark specks. It is preferred in white sauces, soups, mashed potatoes, Asian cooking, and light-colored processed meats and dressings. ASTA grade denotes screened, cleaned berries.
