Pure ground red pepper, extra hot, est. 70,000–80,000 SHU. Sterilized. Ground red pepper is pure dried hot chili milled to a fine powder, graded by heat. The 60,000 SHU grade and the extra-hot 70,000–80,000 SHU grade give substantially more heat per ounce than cayenne, letting manufacturers reach a target heat with less pepper in hot sauces, snack seasonings, and blends.
