Bhut jolokia, the ghost chili, ranges from 500,000 to over 1 million SHU with a slow-building, lingering heat and a smoky-fruity aroma. Whole pods are infused or ground in-house; the ground form goes into extreme hot sauces, snack seasonings, and specialty blends in very small percentages.
