Ceylon "soft" cinnamon, M4 grade, 5 inch cut. Cinnamon sticks (quills) are used whole in mulled beverages, syrups, braises, rice, and as retail packs and garnishes. Cassia sticks are thick, hard, and bold; Ceylon "soft" cinnamon is layered, delicate, and sweeter, preferred for fine baking and Mexican-style chocolate and coffee. Length grades suit different packaging and uses.
