Premium Saigon cinnamon. Volatile oil 5%. Ground in the USA. Ground cinnamon is cassia bark milled to a fine powder; the volatile oil percentage is the measure of strength. Vietnamese and Saigon cassia run high in oil for a bold, sweet-hot flavor suited to bakery and cereal; Korintje (Indonesian) is smoother and milder for general use. Granulated tea-cut cinnamon is used for infusions and visible inclusions.
